How to steep:
- Make it hot
Heat fresh water in a tea kettle or electric tea kettle. Don’t microwave it! Microwaving causes a breakdown of the water molecules makes the tea taste flat.
- Follow the rules
Specific instructions for all of our teas are listed on each package. All instructions are based on an 8oz. cup so you’ll have to adjust the amount of tea you use to the size of the mug or teapot you are using.
- Pour it on
Scoop tea into your infuser and pour water over the leaves. Steep according to directions. Remove the infuser after your tea is done steeping. Keep in mind that Oolongs, greens, and whites can be used for multiple infusions. We recommend using an infuser made of natural materials: stainless steel, glass, or unbleached paper filters.
- Wait it out
Water temperature as well as steeping times vary by type of tea:
Black Tea: 3-5 minutes @ 212°F
Oolong Tea: 3 minutes @ 190-200°F
Green Tea: 2 minutes @ 140-180°F
White Tea: 2 minutes @ 180°F
Herbal/Rooibos Tea: 7-10minutes @ 212°F
- Sit, sip, enjoy, and store
- Once you’ve enjoyed your tea, be sure to store the rest of it in a cool, dry and dark environment (not a refrigerator). You store your teas in the pouch we sell them in for six months to a year. Any longer than that, we recommend investing in a ceramic or tin canister with airtight lids.
How to brew:
- Keep it fresh
The fresher the coffee, the better. Fresh coffee maintains its flavor better. So check the roast date on your coffee and use it within a week of roast. Hint: if you can’t get to it within a week, freeze your beans in an airtight container.
- Grind it out
- Grinding your beans at the time of brewing helps preserve flavor and aroma. Grind your beans until they are the texture of kosher salt or pebbly sand (a good grinder helps). Stick with a ratio of 2 rounded tablespoons of coffee for every 8 ounces of water. Add the coffee to the bottom of a clean French press.
- Make it hot
Some things are better hot. Coffee is better when the water is 200F or just off the boil. Pour the water into the French press with enough vigor to get the grinds stirred up and moving.
Put the lid on the press and give it a minute. A thick layer of grinds will form on top of the water. After 4 minutes, the coffee will be ready—not bitter, totally delicious.
Then it’s game time. Press the plunger down slowly and evenly. Rotate the lid to open the spout and hold the lid down while you pour.
Sit back, sip, and pat yourself on the back for a job well done.
